Ingredients:
- 4 STALKS CELERY MEDIUM DICED
- 1 MEDIUM ONION CHOPPED
- 6 CLOVES GARLIC CHOPPED
- 1 MEDIUM GREEN PEPPER, MEDIUM DICED
- 1 MEDIUM RED PEPPER, MEDIUM DICED
- 2 # GROUND TURKEY
- SEASONINGS TO COOK TURKEY: 2 T CUMIN, GRANULATED GARLIC, PINCH SALT
- 2 # SAUSAGE, CASING REMOVED (YOUR CHOICE: CAN USE CHORIZO)
- SEASONINGS TO COOK MEAT: 2 TABLESPOONS OF *GROUND CHIPOTLE SPICE, 1 T GRANULATED GARLIC, PINCH SALT & PEPPER

- ½ STICK BUTTER
- 2 CANS WHITE BEANS, DRAINED, RINSED
- 4 CUPS LOW-SODIUM CHICKEN BROTH
- 1 4.25 OZ CAN CHILI’S, CHOPPED
- 1 28-OZ. CAN CRUSHED TOMATOES
- ½ CUP CILANTRO, CHOPPED
- ¼ t CRUSHED *DRIED JALAPENO PEPPERS OR RED HOT PEPPER FLAKES
- 1.5 t CUMIN
- 1 t CHILI POWDER
- 1 t ADDITIONAL CHIPOTLE POWDER
- ½ t *ANCHO CHILI POWDER
- ½ BOTTLE RED SOFRITO (SPANISH)
- 1 T ARROWROOT, DISSOLVED WITH COLD WATER

Directions:
SAUTE SAUSAGE OVER MEDIUM HEAT WITH 2 T CHIPOTLE POWDER, 1 T GRANULATED GARLIC, PINCH EACH OF SALT AND PEPPER, UNTIL THOROUGHLY COOKED, TURNING OFTEN. REMOVE TO BOWL.
USING SAME PAN, COOK GROUND TURKEY MEAT WITH CUMIN, GRAN. GARLIC AND SALT. DRAIN, ADD TO SAUSAGE BOWL.
IN LARGE STEW POT, MELT BUTTER, SAUTE ONIONS AND GARLIC UNTIL GOLDEN ADD CELERY AND PEPPERS FOR TWO MINUTES THEN ADD DRIED JALAPENO OR PEPPER FLAKES.
ADD SAUSAGE & TURKEY TO POT, SAUTE 2 MINUTES
ADD BEANS, CHICKEN BROTH, GREEN CHILI’S, 1.5 t CUMIN, 1 t CHILI POWDER, PINCH SALT & PEPPER.
ADD CRUSHED TOMATOES, 1 t ANCHO CHILI PEPPER, BRING TO BOIL, SLIGHTLY COVER AND SIMMER 20 MINUTES, STIRRING OFTEN.
ADD 1 t CHIPOTLE POWDER, ½ t ANCHO CHILI POWDER, COVER AND SIMMER 12 MINUTES. TASTE
ADD CILANTRO, ½ BOTTLE RED SOFRITO, AND COOK 12 MINUTES.
IF NECESSARY, THICKEN WITH ARROWROOT, TOP WITH SCALLIONS AND CHEDDAR CHEESE.
