RECIPE OF THE MONTH JUNE

Island Grilled Chicken

Ingredients:
  • ½ cup fresh lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon cumin
  • ½ teaspoon granulated garlic
  • ¼ cup cilantro, chopped
  • 2 tablespoons olive oil
  • 4 (8 oz. boneless, skinless chicken breasts)
  • pinch salt
  • pinch pepper
Directions:

In a bowl large enough to hold chicken, whisk lime juice, honey, cumin, granulated garlic, cilantro, olive oil, salt and pepper until well blended. 

Add chicken to bowl and marinated on both sided for 20 minutes.  At this time, spray grill racks with cooking spray, and preheat gas grill to medium-high heat.

Grill chicken for 2 minutes, baste using marinade, turn 180 degrees on same side and grill 2 minutes.  Turn chicken, baste with marinade and grill 2 minutes, baste, turn 180-degrees and grill 2 minutes.  Turn chicken one more time and repeat cooking only 2 minutes more, basting chicken each time.  Remove chicken and top with Edamame salsa.
